Zucchini Bread

Yield: 2 loaves


  • 3 eggs
  • 2 cups sugar
  • 3 cups flour
  • 1 cup nuts
  • 1 cup oil
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 cups grated zucchini
  • 1 Tbsp. vanilla
Mix sugar and oil, then add eggs and vanilla.  
Combine dry ingredients and combine.
Stir in zucchini and divide into 2 loaf pans.
Bake at 350º for 1 hour.
