Butter Herb Baked Fish

  • 1/2 cup sweet cream butter
  • 2/3 cup crushed saltine crackers
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp EACH: basil, oregano, salt
  • 1/4 tsp. garlic powder
  • 1 lb. sole or perch fillets
Preheat oven to 350º.
In a 13"x9" pan, melt butter in oven, (5 to 7 minutes).
Meanwhile, in a 9" pie pan, combine cracker crumbs, cheese, and spices.
Dip fish in butter and then in crumb mixture.
Arrange fillets  in baking pan and bake near the center of the oven for 25 to 30 minutes or until fish is tender and flakes with a fork.  
Serve immediately.
