Onion Roasted Potatoes

  • 1 envelope onion soup mix
  • 1/2 cup olive oil
  • 1/4  up melted butter
  • 2 lbs. all purpose potatoes, quartered
  • 1/4 tsp. pepper
  1. Preheat oven to 350º.
  2. In a shallow pan, thoroughly blend all ingredients except potatoes.
  3. Add potatoes, turning to coat well.  
  4. Bake, stirring occasionally, for 60 minutes, or until potatoes are tender and golden brown.
