Morning Glory Muffins

Yield: 18 muffins
  • 2 cups flour
  • 1¼ cups sugar
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • ½ tsp. salt
  • 2 cups grated carrots
  • ½ cup raisins
  • ½ cup pecans
  • ½ cup coconut (edited)
  • 1 apple, peeled and grated
  • 3 eggs
  • 1 to 1½ cups oil
  • 2 tsp. vanilla
  1. Combine dry ingredients.
  2. Mix eggs, oil, vanilla together.
  3. Combine wet and dry together.
  4. Fold in remaining ingredients.
  5. Bake at 350º for 15-20 minutes.
